Prima Donna is matured – just like the best of wines – until it reaches the pinnacle of flavor. For this reason the cheeses do not mature for a set amount of time, but rather until they acquire a particular set of flavors. Throughout the ripening period there are four different varieties to discover: fino, maturo and forte, each one offering a unique Italian taste sensation. The fourth variety “leggero”, contains only 17,5 % fat absolute (30 %) and features a light and piquant flavor, making it the ideal cheese for health conscious consumers.
Through special ripening of Prima Donna and especially of the extra-long ripened varieties maturo and forte visible ripening features appear - little white dots in the cheese, which are called ripening crystals. The fine white crystals seem to heap up in the cheese holes. That is why, when you slice Prima Donna, there can be visible white stripes over the slice section of the cheese. This characterizes Prima Donna just as their unique and specific ripening.
Especially on its own is Prima Donna a real delicacy, for example with a good glass of red wine such as a Cabernet Sauvignon, Pinot Noir, Syrah or Zinfandel.
